D.I.Y. Fridays – Strawberry Balsamic Dressing

It is both strawberry season and lettuce season, and so I concocted a fresh strawberry balsamic dressing to go on my homegrown Raíces lettuce! It was beyond good! And because I love all you tree huggers, I’m sharing. You are welcome!

1/3 cup balsamic vinegar
1/2 cup olive oil (I used regular. I think extra virgin would taste too strong)
1/2 cup hulled strawberries
1 clove garlic
1/2 tsp dijon mustard
1/2 tsp salt
1/2 tsp sweetener of your choice (optional – the balsamic and strawberries sweeten this up pretty well)
handful fresh basil

Throw it all in the blender and mix until emulsified. I actually use an immersion blender and do it in a jar. It should keep in the fridge for about a week. Don’t let anyone see you drinking this straight from the jar… it’s that good. This is great on salad or even grilled meat or veggies! Enjoy!
